Praise the lord: Marty's coming back from tour tomorrow. I haven't had a bit of work or a single non-social obligation since I got back from Hong Kong ten days ago; my mental state and my housekeeping are both approaching maximum entropy. Can't wait to sift through M's luggage in search of presents, scratch around his scalp in search of pickable shreds of dandruff, and concentrate all my healing powers on the inevitable tour-bus-incubated epizooties he'll bring home (pan-Shins conjunctivitis epidemic...ew!). And, of course, to stock our fridge with down-home delights to please his palate:

Ah. That would explain why this guy tasted so lousy even though he was the freshest beef I ever had.

We were gnawing his tough, bland ass not an hour later. I figured it was because he was a variety I was unfamiliar with or because we boiled him in an old oil drum.

Unable to penetrate the mysteries of sushi grading without brushing up my japanese, other than to find out that 'umami' means 'good flavor' and 'shitami' 'preliminary inspection'. But I have a hypothesis: the difference is arbitrary with regard to which side was deck-down on the ship, but poking the carcass to determine fat content degrades the side you touch, but not the side you don't.

Went to Tsukiji market this morning for a bit of investigation and, you know, fresh fish.

The words seem to exist because because boats use a different convention about which side is down (so they can't simply use 'right' or 'left') but for each vendor it was either all one or all the other. A bit of unstructured observation at the band saw and there actually does seem to be a difference, namely blood. Seems to settle more in the shitami side, leaving uwami a beautiful pink.
